Many people don't have the patience to get mechanical brakes set up properly. The only difficulty (without specialty equipment) is getting the shoes matched to the diameter of the drum and accurately centered. When done correctly you'll have 80%+ of the shoe working and rarely need to adjust the brakes. My wife Susan (all 100lb.!) has no difficulty skidding either of our cars. The Fordor stops better because the extra weight in the rear reduces sliding or skidding.

The couple of 'A's I've driven with hydraulics have functioned well but required more pedal pressure than I'm used to. I'm not fond of the smaller, wider wheels because of the loss of Model 'A' character. But it will slightly improve the breaking with the added rubber on the ground.

A good tight Model 'A' is very comfortable at 0-55mph and 55-0mph. Most important though is to make it the way you want it, then let your 'A' show you it's comfort zone for driving!
