What Painting Process to use

Hello, All
I will be starting to paint in the very near future.On my 1931 Town Sedan I used a Base Coat Clear Coat system from PPG.
This of course was not the orginal way Henry had done these cars.Although I find it easy to use is this new system I am wondering what experience or pitfalls would be encompassed in the "old system"
Do I attempt the traditional or keep it easy and straight forward.
By the way I use an HVLP sprayer from Lexmark.
