So how much should the knob be opened while running it. Also, i changed the oil, spark plugs, .027, as recommended and purchased a new battery. The car runs with a chug a lug. It dosen't stall and as i'm not used to antigue cars, is this normal?

It is great to read your comments regarding how much fun you are having. This is your hobby and you are supposed to have fun ! My feeling on the gas adjust valve is that you have to develop a feel for where to adjust it to while warming up. It will be a changing setting. I always bring it as lean (far right) as it will run and then back an 1/8 so it perks along warming up. Where you set it and for how long depends on the temperature (actually of the manifold and block). With the spark lever half way and the engine warm it should run at a nice perky pace. You should be able to make it run that way or very close while warming up. They are individuals so you sort of have to get used to what works.
I'm sure you will see some other hints here because Model A owners are individuals just like their cars and they have ingenious ways making their cars perform.
