Gas mixture, starting procedure, engine idle

I just purchased a 1928 Model A Sport Coupe. I love the car and have been reading manuals but find the owner's manual lacks some information. It tells me when i start the car, that i have to turn the gas mixture on the choke one full turn to the left and pull the choke out while stepping on the starter. This starts my car but it dosen't tell me where to leave the mixture when warming up or running it, except to tell me not to run the car with the knob turned more than a quarter of the way open. So how much should the knob be opened while running it. Also, i changed the oil, spark plugs, .027, as recommended and purchased a new battery. The car runs with a chug a lug. It dosen't stall and as i'm not used to antigue cars, is this normal?
