Brad,

It sounds that Sam covered the header aspect well.I can get more info if it would help but I haven't done a S/W myself.

As far as the hood goes, look it over carefully.If the main problem is pitting and there are no holes, then you'll have no problem.If the general shape is good (especially around the center hood hinge) it is well worth using.Even if it is straight along the hinge but tiny cracks (1/32") are starting
along the hinge, they can be TIG welded and ground with no problem.If your body guy cannot make it straight then you must consider alteratives.

Original hoods fit the curves of the body much better.New hood tops are slightly less sharp, have oversized rivet heads (no one will notice), and are flat in the area below the belt line (looks funny).The hood sides are entirely flat instead of having the required contour or bow in the louvers, and the handles are poor, however some people rivet the original handles on new sides.

Bottom line is a new hood will look much better than a poorly restored original, but if the original is restorable you will like it much better.
