Sid and Dan,
Dan is right on the controls and yes there is quite a bit of difference in the carb mixture control (the turns on the rod on the passenger side.)My particular Zenith carb has to run about 1 to 2 turns out.The only time it will run at less than a quarter turn is at idle.Any load or increase in throttle will result in back firing and missing (starvation of fuel). So it needs some kind of "tuning" but it runs fine like it is and has been all over the country, so it isn't really broke so I'm not going to fix it.
I'm also glad to hear that you both have an interest in carrying on with the Model A's that your father and grandfather's have passed on to you.Get your family involved with the hobby. My daughter and son were driving a Model A long before they officially had a license and still are interested in the hobby. In fact I rarely get to drive our A on long distance tours because they want to drive.
Good luck with your cars and have fun,
John
