Too much gas???

Before I tear into the carb, I'd like some comments or advice from the experts out there.Here's the problem.After driving my 1930 tudor for 1 1/2 - 2 hours at speeds of 48-52 MPH and stopping for 10 min to gas up, the car starts right up and about 20-30 seconds later is sputtering and backfiring with no power. If I let it run for 3-4 minutes this way the extra gas is used up and I can go on my way. I usually run the carb needle valve at 1/8 to 1/4 of a turn open, and whenever I stop the engine I turn off the gas with the tank valve and also close the needle valve. This only seems to happen after long high speed (50 mph) runs and doesn't happen while driving in town. The carb is a new reproduction Zenith.
My theory is that with the two valves closed the gas in the float bowl expands and builds up pressure and as soon as the engine is restarted floods the carb.Should I not close the needle valve and the tank valve for these short stops?Is there something else that I need to look at?I have a theramostat in the upper radiator hose and the engine runs at l65-170 degrees steady with no boil over.What's the problem?
