Michael,
If I were in your shoes, I would want to get the coupe running before doing any major work. This way you'll know if there is a noise in the engine, tansmission or rear end that will need special attention or if the steering or brakes need attention.
Is the engine free? When replacing the oil, pour the last quart down the distributor hole. This will ensure that the main bearings get oil before starting the engine. I'd also replace the other fluids and squirt some oil in each cylinder and spin the engine by hand to lubricate those parts. Good luck with your project.
You may want to consider joining a local Model A club and one or both of the national clubs.
