Carb. Rebuild

Hello All,
I am midway through the process of rebuilding my Zenith carb.I have it primed now after much clean-up and am planning on painting it tomorrow.Anyway, I bought a carb. rebuild kit and it has new jets and a new valve and things.I read somewhere that originol jets are far better than new ones and work much better.Question:How do I know if orignal jets are good?I forget the name, but the longest one, seems to maybe be clogged, maybe the opening is supposed to be really small compared to the other two??
Should I use the new float valve or old one?How do I know if old one is performing up to standards??
By the way, the carb. was on the car and car ran, idled fairly well, but not real good..thus the rebuild.Any thoughts??
