Welcome back Brian!I guess you are enjoying summer weather there in the southern hemisphere.
On original tappets, valves etc.The adjustment was by grinding the mushroom end of the valve that rides on the tappet.If too much was taken off, it was replace the valve or resink the valve seat or find a taller tappet.There are adjustable tappets now available from the A suppliers.The bosses in the block may have to be milled down to accommodate the adjustable followers though.
No push rods in a Model A unless you have an overhead valve conversion. The valves ride on the tappet which in turn ride on the camshaft.
If you've got a copy of the Service Bulletins, there is a good explanation of checking valve clearance.If not, let me know and we'll get you something.
The removable plate on the oil pan (sump) was only used on early '28's.The rest have to remove the pan to remove the pump.You can use a small screw in the side of the block to hold the pump while removing and replacing the sump.
