1930 Roadster - Deluxe Vs Standard - differences

I'm currently looking at purchasing a '31 Roadster and being new to the hobby, have found only one basic difference between the Deluxe and Standard versions, that being the height of the windshield stanchions.
If I'm able to pick up a Roadster, say it is a Standard, is it merely a matter of changing the stanchions and then putting in the Deluxe accessories (i.e.: upgraded seats, top, etc. ) or is there something in the actual body / frame / engine make up that a person should be aware of.
In other words, if it's just a matter of replacing the stanchions, why do a restoration to the Standard level?
