engine rebuild

I need your advice, I found engine with good standard size crank and bearings also standard bore. Only problem is mice got in one cylinder and now has deep pitting between the valves and the bore but not into the bore. How much may I mill off the top of the block to clean it up and install valve seat inserts ? Jim
