This is a matter of personal preference.

"Is it worth doing?" - that's up to you

"Can it be done?" - sure, since all bodies will go on all frames.The front fenders, splash aprons, and running boards from a '31 Tudor will work fine on a '31 roadster, but since sedans used different fenders than coupes/roadsters/pickups, you'll need new ones.

"Will it deter from it's value?" - I'd say "no" if you do a good job; an open car is always worth more than a closed car in similar condition.You may not recover your investment but it will be worth more when you're done with the roadster conversion.

I need a pair of sedan fenders; let me know if you do the conversion and I'll take 'em off your hands!
