Tim,
I'm using a (I think)Bratton's 160 degree thermostat and would recommend using the 160 degree unit as well. The car runs cooler during the summer and warms up quicker during the winter. In fact it even uses less water than before the termostat. I would recommend the one welded to a statinless steel pipe and then putting a hose clamp around the outside of
your water hose. This will prevent it from moving and it will want to move once the water gets moving.

I ran it during a hot summer day on a trip 225 mile trip, half of which was up a very steep grade. The car ran fine a never over heated. I had taken the same trip the year before without the termostat and ran much hotter.

The water will find its own level so don't worry when it ridds itself of excess H2o.
