The closest I've seen to a step by step disassembly is the one in Jim Schild's book, "Restorer's Model A Shop Manual".He not only tells how to tear it apart, he also tells you what to look for as far as defects, cracks etc.There is also a chapter on the transmission.This is not a Hayne's style picture step by step but it is a 1, 2, 3 etc.I think it would fit your need quite well.
It is published by Motorbooks International in Osceola, Wisconsin and is available from most Model A part suppliers.Walt Bratton sells it for $19.95 at 1-800-255-1929.
