Wayne,
The function of the thermostat is to cause a more uniform heating of the engine block. The 160 degree thermostat that you are using is set to gradually open probrably somewhere about 140 deg. until it is full open at 160 deg.
If you are running in the 175-185 degree range I wouldnt change a thing, your fine.
p.s......Maybe someone else can give you a more detailed answer to this, I've answered my quota for the week. I dont want to get chewed out.
